Parmesan Cheese and Potato

1 lb. frozen hash brown potatoes
1 can cream of potato soup
1 can milk
1 diced onion
Salt and pepper
2 Tbsp. minced parsley

Preheat oven to 350 degrees. Mix all ingredients together except parsely and put into buttered baking dish. Mince parsley and put on top. Dot with butter. Sprinkle with Parmesan cheese. Bake 2 hours in a 9×12 inch baking dish.

Serves 4 to 5.

Ham and Cheese French Toast

 

Grilled Ham and Cheese Sandwich

3 eggs
3/4 C. milk
1 Tbsp. sugar
1/4 tsp. salt
8 slices bread, lightly buttered
4 slices boiled ham
4 slices Swiss or American cheese
butter or margarine

Beat eggs with milk, sugar and salt just to combine. Make 4 sandwiches with bread, ham and cheese. Cut into quarters diagonally. Place in single layer in shallow baking dish. Pour egg mixture over top, coverinig completely. Refrigerate overnight. Next day, just before serving, in hot butter saute sandwiches until golden on each side and cheese is slightly melted.

Makes 4 servings.

Angel Biscuits

3/4 c. shortening
5 c. flour
1 tsp. baking powder
1 tsp. salt
3 tsp. sugar
1 pkg. dry yeast dissolved in 1/2 c. warm water
2 c. buttermilk

Sift all dry ingredients. Cut in shortening and add buttermilk and yeast. Stir until flour is well moisented. Let set 1/2 hour. Drop by rounded tablespoonfuls onto ungreased cookie sheet, 2 inches apart, flatten a bit. Bake at 400 degrees for 15 to 20 minutes. Dough will keep in refrigerator for 1 week, but cover it well.
